Baked Eggplant
Eggplant is a great vegetable to have if you are a vegetarian. Its nutritional value can make for a perfect balance compared to other ones available. Eggplant can be a very good substitute for meat too. It can be served as a tasty side dish or a part of the main course.
Baked eggplant is a great dish that can be eaten anytime or served as snacks. Below is the recipe for you:
Ingredients:
- 3 medium sized Eggplants.
- 3-4 large cloves Garlic thinly sliced.
- 2 slice Pecorino Romano Cheese.
- 2 sliced tomatoes.
- 1/4 cup freshly chopped parsley.
- 4 tablespoon of olive oil
- Salt and pepper for taste.
- For the topping you would require:
- 3/4 cup of breadcrumbs.
- 1/4 cup grated permesan cheese
- 2 tablespoons of Oregano.
- 3 tablespoons of Olive Oil.
Method:
- Pre heat your oven to 375 degrees. Wash the eggplants and cut it into lengthwise halves.
- Cut 6 slits in each of the halves. Do it very carefully without slitting it entirely.
- Make a mixture of the cut tomatoes, garlic, pecorino romano cheese and parsley.
- Place this into the slits with the help of a knife. Sprinkle the eggplants with salt, pepper and olive oil and put it into the oven for baking. Let it bake for 30-45 minutes till the eggplant cooks.
- Mix the breadcrumbs, grated parmesan cheese, oregano and olive oil well.
- Sprinkle this over the baked eggplants and let it bake some more till the topping turns golden brown.
- Baked eggplants are ready to serve.
This quick dish can be eaten with the main course or served with drinks.
