Butterscotch Cake Recipe

Butterscotch CakeButterscotch is a popular dessert flavour. It includes prime ingredients like brown sugar/molasses and butter. Being a popular flavour, its added to various desserts such as puddings, brownies, cakes, ice-creams etc.

According to old cook books “Blondies” or blonde brownies were quite popular during the 19th century in America. The primary ingredients being brown sugar and butter or butterscotch flavour, as we call it. Presumably these recipes led to the baking of butterscoth brownies, puddings or even cakes.

One such recipe of a butterscotch cake is:

Ingredients:

For Cake:

2 cups cake flour – sifted
3 teaspoons baking powder
1/2 teaspoon salt
2 medium eggs
1 1/2cups brown sugar – packed
1/2cup butter or margarine – softened
1 teaspoon vanilla extract
1 cup milk

For Butter Frosting:

1/4cup butter or margarine
2 cups powdered sugar
1/2 teaspoon vanilla extract
2 tablespoons cream
1 tablespoon hot water

Directions:

Step 1: Take a bowl and put cake flour, baking powder, salt into it and sift them together.
Step 2: Add brown sugar, butter or margarine, milk (2/3 cup) and vanilla extract to the mixture.
Step 3: Beat the mixture for about 2 minutes at medium speed.
Step 4: Now add eggs yolk and rest of the milk to the mixture. Beat 2 minutes more.
Step 5: Pour the mixture into 8-inch greased and floured cake pan.
Step 6: Preheat the oven at 350 F for 5 minutes.
Step 7: Bake the mixture at the same temperature for about 25-30 minutes.
Step 8: To prepare butter frosting, put the butter over low heat in a pan, watching carefully.
Step9: As the butter starts turning brown in color, add the other ingredients of frosting to it. Keep stirring the mixture till it gets smooth. Let the mixture cool.
Step 10: After due time, take out the cake from the oven. Let it cool and now frost the cake with layers of butter frosting.
Step 11: Serve chilled.

Apart from the traditional methods of baking a butterscotch cake, non-time consuming methods of baking have been discovered. One such alternate method of baking the cake is:

Ingredients:

1 pkg. yellow cake mix
1 can butterscotch pudding
1 or 2 eggs
2 tbsp. cooking oil
1 (6 oz.) bag butterscotch chips
1/4 c. chopped pecans

Directions:

Step 1: Mix together cake mix, butterscotch pudding, eggs and cooking oil.
Step 2: Grease and flour 13 x 9 inch pan. Pour in batter.
Step 3: Sprinkle chips and nuts on top.
Step 4: Bake at 350 degrees for 30 minutes.
Step 5: Serve chilled.

Tips:

  • To add more flavour to the cake, you can also experiment with ingredients like chocolate or cocoa to bake a chocolate butterscotch cake.
  • Also instant coffee powder can be added to the batter to make butterscotch pound cake.
  • For kids, chocolate flavour to the cake adds an extra zing to the flavour. For the adults 1/2 cup of rum added to the batter would satisfy their tastebuds.
  • The cake can also be glazed to make it look even more tempting.

Glaze: Microwave 1/3 cup butterscotch flavoured morsels and 1 to 2 tablespoons milk in small, bowl on medium-high power for 30 seconds, and stir. Microwavefor another 10-20 seconds, stirring until smooth. Let it cool for 5 to 10 minutes. Pour glaze over the cake and sprinkle with chopped nuts.
