Butterscotch Fudge Recipe

Butterscotch FudgeButterscotch is a type of confectionery consisting of primary ingredients such as brown sugar, butter and other ingredients such as corn syrup, cream, vanilla, and salt .The ingredients for butterscotch are similar to toffee or candy, however the difference being that the sugar is boiled to the soft crack stage for butterscotch and the hard crack stage for toffee.

Butterscotch is also a popular dessert sauce and ice cream topping. The sauce is usually homemade syrup which does not harden like candy and is used on ice cream, over fruit and for other treats.

It is also a popular flavor now. Recipes which include brown sugar and butter together are usually termed as butterscotch flavored, where the actual confection butterscotch is not involved. e.g. Butterscotch pudding. Today brownies, cookies and cakes may also have butterscotch flavor, and the butterscotch frosting is very popular as well. Like chocolate chips – “butterscotch chips” – are available everywhere and used in recipes from brownies to fudge.
One particular butterscotch fudge recipe is:

Ingredients:

  • 1 (10 ounce) package mini marshmallows
  • 1 (12 ounce) package butterscotch chips
  • 2 cups chopped walnuts
  • 4 1/2 cups granulated sugar
  • 1 can evaporated milk
  • 1 cup (2 sticks) butter or margarine
  • 1 tablespoon vanilla extract

Hardware:

  • Saucepan
  • 8 X 8″ dish
  • Ladle

Directions:

  • Step 1: Grease the dish with butter and line with foil wrap

  • Step 2: Combine marshmallows, chips and walnuts in large bowl.

  • Step 3: Combine sugar, evaporated milk and margarine in large saucepan. Cook to soft-ball stage (236 degrees F), approximately 6 minutes.

  • Step 4: Stir in vanilla extract.

  • Step 5: Pour over marshmallow mixture in bowl and beat until morsels and marshmallows melt.

  • Step 6: Cook on medium for 3 minutes, stirring once.

  • Step 7: Pour into a greased 8 X 8″ dish.

  • Step 8: Chill until firm.

  • Step 9: Cut into squares and serve.

Tips:

  • Make sure you boil the sugar to a soft ball stage ( approx. 236 degrees F).
  • Nestle Toll house- Butterscotch flavored morsels; could be used if butterscotch chips are not available.
  • Butterscotch fudge could also be flavored with chocolate. To do so add Dark chocolate chips to your existing recipe.
  • Serve chilled with vanilla cream.
  • To cut out clean edges, dip your Knife hot water.
