Easy Vegetarian Soup Recipe

Bean and Barley Veg Soup1. Vegetarian Bean and Barley Vegetable Soup

This is basically a vegetarian and vegan recipe for healthy homemade barley and vegetable soup. It is easy to make, plus it is both healthy as well as filling. It can be eaten as a proper meal in itself and you can just add about any vegetables you want that are green beans, peas or corn, which are very nutritious.

NOTE: The preparation time required for the soup is around 10 minutes and cooking time required for the soup required is 60 minutes. The quantity of recipe below is for 4 servings. You can increase the quantity accordingly.

Ingredients:

  • ½ diced onion
  • 2 ribs of diced celery
  • 2 diced carrots
  • You can add any other vegetables accordingly but around ½ cup each
  • 2 tablespoon of oil or margarine
  • 8 cups of water or the vegetable broth will do
  • 1 cup of uncooked pearled barley
  • 1 cup of pre-soaked if dry pinto or white beans
  • 1/3 cup of tomato paste or properly crushed tomatoes
  • ¼ teaspoon of salt
  • ½ teaspoon of pepper
  • ¼ teaspoon of celery salt accordingly
  • ½ teaspoon of basil
  • ½ teaspoon oregano or Italian spice mix
  • ½ teaspoon of thyme
  • 1 teaspoon of onion powder accordingly
  • 2 large bay leaves

METHOD:

STEP 1: Firstly in a large soup pan sauté the onions, celery, carrots and any other vegetables for around 3-5 minutes.
STEP 2: Now add the vegetable broth or water as you like and all other ingredients plus put it on sim, then reduce the heat to medium low.
STEP 3: Then allow it to cook on sim for at least an hour and keep stirring it occasionally till the barley becomes very soft and somewhat fluffy. Add more spices to taste and enjoy the delicious and healthy soup.

Hot and Sour Soup2. Hot and Sour Soup

Hot and sour soup is a very popular and mostly liked by people and even it is given to people who are unwell. The plus point of this soup is it is very easy to make.

NOTE: The quantity of recipe below can serve 6 to 8 servings and time required for it is around 45 minutes.

Ingredients:

  • 8 cups of vegetable stock or their water
  • 1 dozen well dried Chinese black mushrooms
  • 3 Tablespoon of dry sherry or rice wine
  • ½ cup of cider vinegar
  • 2 Table spoon of soy sauce
  • 1¾ teaspoon of salt
  • ¼ pound thinly sliced firm tofu
  • 2 Tablespoon of cornstarch
  • 6 green finely minced onions
  • ¼ teaspoon of white pepper
  • Little of sesame oil

METHOD:

STEP 1: Firstly in a small bowl pour 2 cups of boiling water over the dried mushrooms. Cover it with plate and let it settle for 30 minutes.
STEP 2: Drain and squeeze the mushrooms and save the liquid. Now de-stem the mushrooms, discard stems, and slice the caps.
STEP 3: Now combine the remaining 6 cups of vegetable stock with the mushroom liquid and mushrooms. Then add sherry, soy sauce, salt, and tofu at lower heat, and put it on sim for 10 minutes.
STEP 4: Take a bowl, whisk the cornstarch into ¾ cup of soup till it gets dissolved.
STEP 5: Lastly add the green onions and pepper cook it for another 2 to 3 minutes, and serve it with a few drops of sesame oil on top of each serving that makes the soup tastier and healthier.
