What is Huevos divorciados?

Huevos divorciados aka Fried eggs on Corn Tortillas (Divorced Eggs) is a Mexican Breakfast. It consists of two eggs, one is covered with salsa roja and the other one with salsa verde, giving it distinct flavours and red and green colour as well. Both being separated by a column of chilaquiles.

Huevos Divorciados Recipe:

For Red and Green salsas

  • 1/2 lb plum tomatoes
  • 1/2 lb fresh tomatillos (discard the husks and rinse tomatillos)
  • 2 fresh jalapeno chiles
  • 1 (1-inch) wedge of large white onion
  • 2 garlic cloves
  • 4 to 8 tablespoons corn or vegetable oil
  • 8 large eggs
  • 8 (6- to 7-inch) corn tortillas
  • 2 teaspoons salt
  • 3 tablespoons chopped fresh cilantro
  • 1/4 to 1/2 cup water

Steps

Step 1- Prepare the salsas.

  • Roast tomatoes, onion, jalapenos, tomatillos on a moderately heated griddle.
  • Discard stem from jalapenos .
  • Discard half of seeds from each chile.

For Red salsa

  • Coarsely purée tomatoes
  • 1 jalapeño
  • 1 garlic clove
  • 1 teaspoon of salt in a food processor or blender, transfer to a bowl.

For Green salsa

  • Coarsely purée tomatillos
  • remaining jalapeño
  • remaining garlic clove
  • remaining teaspoon salt, cilantro
  • 1/4 cup water, add more if required for the consistency, and transfer to a bowl.

Step 2- Cook eggs

  • Heat 2 teaspoonful oil in a skillet.
  • Gently break 2 eggs in a cup (keeping yolk intact)
  • Then pour into skillet and cook for 5 minutes.
  • Season with salt and pepper.

Make more eggs in the same way as needed.

Step 3- Fry tortillas. (Fry tortillas while eggs are being cooked.)

  • Heat moderately 2 tablespoons oil in another small nonstick skillet.
  • Stack 2 tortillas in skillet.
  • Cook bottom tortilla (30 seconds on first side). Flip stack with tongs. Continue until both sides of both tortillas are cooked.

Tortillas will soften and puff slightly, then deflate (they should not become Brown or crisp)

Fry more tortillas in same manner, adding oil as needed.

Now put tortillas in a plate, top with eggs. Spoon a different salsa on each egg.
