Macedonia Salad

About the Macedonia Salad

Macedonia salad consists of either vegetables or fruits. When composed of fruits it is called Macedoina de frutas. it is common as a dessert in Spain, France, Italy and Latin America. Vegetable Macedonia or Macedoina de frutas is a cold salad or hors d’oeuvre of diced vegetables, in France usually including red beans. When mixed with Mayonnaise along with aspic stock it becomes same as a Vegetarian Russian Salad. Macedoine de legumes is a hot vegetable dish also consisting of the same vegetables served with butter.

Origin of the word Macedonia

According to an etymologist, Juan Antonio Cincunegui, at the end of the 18th century, the word Macedonia was popuralised to refer to mixed fruit salad. It is also said to refer to the ethnic mixture of the Ottoman 19th century Macedonia. But this interpretation is not accepted as per the present chronology and contemporary sources. In fact, Macedoine can be used for medley of any unrelated things, not necessarily edible. Thus, it has no roots in Macedonia.

Recipe of Macedoine de legumes

Ingredients

  • 1 and half cup of pancetta, chopped in small cubes
  • 1 tsp. of sugar
  • 3 Tbsp. clarified butter
  • 1 cup of fresh shelled peas (you can also use frozen peas, but don’t defrost them before)
  • 1 cup of snow peas
  • 6 mini-carrots with their green tops
  • 6 scallion branches
  • 6 small turnips
  • Salt and pepper
  • 1 bunch of fresh tarragon (optional)

Steps

  1. Wash and peel the turnips and carrots.
  2. Shell the fresh peas.
  3. After washing the scallions, cut them in half.
  4. Wash and pat dry the tarragon. Remove the leaves from the branches.
  5. Boil a pot of water, add salt and cook all the vegetables separately except scallions.
  6. Cook carrots and turnips for 15 minutes, fresh peas for 10 minutes, snow peas for 5 minutes.
  7. To prevent them from continuing to cook, rinse each vegetable under cold water. Make sure they remain al dente (firm and crunchy), Drain them.
  8. Heat one tablespoon of clarified butter in a frying pan. Add the scallions. Sprinkle them with sugar. Cook on low heat until lightly colored.
  9. For around 3 minutes, plunge the pancetta cubes in boiling water. Remove with a slotted spoon.
  10. Heat the rest of the butter, onions and all the vegetables. Heat on very low fire for about 5-10 minutes.
  11. Add salt and pepper. Sprinkle with tarragon.

The salad is ready. Serve immediately while warm.

Recipe of Macedoina de frutas

There is no particular rule for the kind of fruits to be used. For a more exotic taste, tropical fruits like mango, papaya etc can be added. For a domestic taste use the fruits from farmer’s market. Macedoina de frutas can be flavored with lemon, liquor etc. as per taste.

Ingredients

  • about 1 450 g of any seasonal fruit available ( berries, peaches, cherries, apricots, etc.)
  • 4 tablespoons sugar
  • juice of one lemon
  • 1 banana, peeled and sliced

Steps

  1. Wash and dice the fruits.
  2. Transfer fruits in a bowl. Add lemon juice and sugar.
  3. Combine well and place in the fridge for an hour.
  4. Slice the banana and combine it with the rest of the fruits.
  5. Before serving, top with whipped cream.
