Main Course Recipe- Lengua
Use of Beef tongue in cuisines- It is widely used in Mexican Cuisines. It is often seen in tacos and burrito (lengua). Beef tongue is a part of German, Portuguese, Persian, Philippine, Romanian, Russian, English and Japanese cuisine.
Beef tongue is very high in its fat content, almost 75% of its calories derived. Canada and Alberta export large quantities of beef tongue.
Lengua Recipe:
Ingredients
- 1 fresh ox tongue
- 1 chorizo de Bilbao or slices of Chinese ham
- 1 can mushrooms
- 1 can tomato sauce
- 1/2 cup sliced carrots
- 2 sweet red and green peppers
- 1 can sweet peas
- 6 or more bananas , cut as desired
- fried soy sauce to taste
- 1/4 tsp. ground pepper
- 1 tsp. Worcestershire sauce
- 5 tbsps. flour
- 2 tbsps. margarine
- salt and pepper
Steps
- Clean tongue thoroughly, remove the outer skin.
- Cook in boiling water.
- When tender add tomato sauce, ground pepper, chorizo, soy sauce, Worcestershire sauce, salt and pepper to taste.
- Melt margarine in a pan, add flour and blend.
- Add 4 cups of liquid in which tongue was cooked, stir until thick.
- Add this sauce to the tongue.
- Add carrots, sweet peas, sweet peppers, mushrooms and cook for few minutes..
Serve in slices garnished with chorizo, fried banana and other vegetables.
Fiesta Lengua Recipe:
Ingredients
- 1 kg “Monterey” Ox Tongue
- 1 Tablespoon Salt
- 2 teaspoon Ground black pepper
- 8 cup water
- 1/4 teaspoon “Anchor” butter
- 2 Tablespoon Minced garlic
- 1/2 cup Chopped onion
- 1 cup “CampoCarne Longanisa Espanola”, sliced
- 1/4 cup Worcestershire sauce
- 2 Tablespoon liquid seasoning
- 6 cup broth from boiling ox tongue
- 1/2 cup pitted green olives
- 1 cup Button mushrooms, sliced
- 1/2 teaspoon Ground black pepper
- 1 cup “Magnolia Quickmelt Cheese”, grated
Steps
- Rub ox tongue with salt and pepper.
- Cook for an hour in a pressure cooker until tender.
- Cool ox tongues and peel off the skin.
- Slice into ½ inch thick slices and set aside.
- Sauté garlic and onions in melted butter.
- Add ox tongue slices, Longanisa Espanola, Worcestershire sauce and liquid seasoning.
- Add broth and cook until mixture thickens.
- Add green olives and butter mushrooms, season with pepper.
- Add grated cheese and breadcrumbs and cook until cheese melts.
The above recipe would serve ten.
Lengua Estofada (Braised beef tongue) Recipe:
Ingredients
- 1.2 lb beef tongue
- 1 beef steak slice, sliced into 1″ strips
- 1/4 cup white wine
- smallest can of tomato paste
- 4 tsp chopped garlic
- 2 tsp kosher salt, and more to taste
- 1/2 cup chopped white onion
- 1/2 tsp whole black peppercorns
- 2 portabella mushrooms (or crimini or white button mushrooms)
- 1 medium sized russet potato
- extra virgin olive oil
- water, about 3 cups
- a few stalks of green onion, for garnish
Steps
- Clean tongue by rubbing in salt and vinegar mixture. Rinse.
- Boil for 5 minutes in water.
- Scrape the entire white surface.
- Brown the tongue by heating in Olive Oil.
- Transfer tongue to a pressure cooker. Add the garlic, peppercorns, 2 tsp salt, wine, tomato paste, onions, and tomato paste.
- Add about 3 cups of water enough to cover everything.
- Once the pressure cooker whistles, reduce heat to medium. Start timing it for 30 minutes.
- Fry potatoes in olive oil.
- After 30 minutes, run cold water over the pressure cooker. When safe, unlock the pressure cooker. Take the tongue out and slice it.
- Add tomato-based gravy to the mushrooms.
- Pour gravy over the meals.
- Garnish with onions and enjoy!
