Tortillas are one of the most favourite and loved snacks of people all across the world. There was a time when tortillas used to be prepared at home, however the recent popularity trend have made many food companies to prepare tortillas and sell them in the market as ready packets.
However, fresh foods have their own charm. And this is reason why homemade tortillas are still more famous as compared to ones that we find in the market. Spanish tortillas also known as Spanish omelettes are easy to cook at home and have a great taste. The recipe is so simple and easy, that you would not mind cooking it on a regular basis. Kids, adults and the old, everyone loves it.
For cooking Spanish tortillas with Zucchini, you will first need a bowl of thinly sliced potatoes. Sprinkle a lot of salt over these potato slices and mix it well in order to make sure that all slices are covered well with salt. Leave it aside for about 5-10 minutes. Grate the Zucchini and wash them properly and keep it separate for a while.
Next, take a large frying pan and put some olive oil in it (the quantity needed to make the pan full by ½ cm with oil). When the oil is heated, start frying the salted potato slices. Now, squeeze the zucchini so that there is no water left in it and add it to the sliced potatoes. Make sure you keep stirring them, or else the slices would stick to each other. The best way to do the frying is to put the potato slices in lots and then fry them.
The potatoes should not be made too brown. Once they are decently cooked, add chopped onions to them, and then cover the pan and leave it for about 2-3 minutes.
In a separate bowl, break 8 eggs and add a little bit of salt to the mixture. Then, beat the eggs well. Meanwhile, keep a check on the potatoes in the pan to see that they are not turning too brown. If required, you can even lower down the flame. When the potatoes start to break due to the movement of the stirring spoon, you know that they are ready. At that point, turn off the flame.
Next, take the potato and onion mixture and add it to the egg mixture. Drain away the excess oil from the frying pan during the process. Keep the pan back on the stove and let it heat without the oil. Meanwhile, keep mixing the potato onion mixture with the egg mixture very well. Once the mixture has been mixed well enough, add it to the heated pan. Flatten the mixture in the pan with the help of a wooden spoon or something similar. Keep the heat at medium level for the next few minutes.
You can use a plate to press down the tortilla mixture so that it gets the traditional tortilla shape. Keep turning the sides of the tortilla regularly. Each time you turn it, it will keep on getting heavier. This means that it is being cooked well enough. Next, keep inserting a knife after every 5 minutes. Whenever the knife comes out clean without the mixture stuck to it, the tortilla is cooked and ready.
The good thing about Spanish tortillas with Zucchini is that they are very healthy. Eggs being an ingredient, tortillas are high on protein. You can cut them out in nice shapes and serve them to your kids. Use any kind of sauce or tomato ketchup as an accompaniment.
