The following is an easy step by step process of making the Spicy Coconut and Pumpkin Sesame salt conveniently in your own home. So this season, let go of the urge to grab a packaged, powdered soup and make your own healthy real soup.
INGREDIENTS:
| Pumpkin | 1 medium |
| Butter | 125g |
| Flour | 4 tbsp |
| Coconut Milk | 150 ml |
| Garlic (Finely crushed) | 2 cloves |
| Onions (Finely Sliced) | 2 large |
| Chili powder | ½ tsp |
| Black Pepper Powder | ½ tsp |
| Vegetable stock | 1200 ml |
| Sesame Salt | to taste |
| Olive Oil | 2 tbsp |
| Bread for croutons | - |
METHOD:
The pumpkin can be conveniently pureed at home, using a mixer grinder. Because the pumpkin stock can be made, frozen and stored, the pumpkin soup can be made all year round.
If it suits your taste, you can also put desiccated coconut or freshly grated coconut to your soup. This will add to the fiber content and make your soup chewy.
