Sugar Free Fudge RecipesIt indeed hurts when we make a sweet dish at home and our grandparents can’t savor the treats…thanks to Diabetes. But does that mean they can’t have sweet stuff at all…..NO!!

There are a number of alternatives to sugar that can be digested by a Diabetes inflicted person. Saccharin is an example. It is 24 times sweeter than normal glucose sugar/ sucrose. Usage of saccharin in sweet dishes is the best possible alternative!!

So don’t cut down on eating, cut down only on sugar.

Here are some fudge recipes that can be made without using SUGAR.

SUGAR FREE FUDGE

INGREDIENTS

  • 1/4 c. diet butter
  • 2 oz. unsweetened chocolate
  • 24 packets Equal
  • 1 tsp. vanilla extract
  • 1 (8 oz.) pkg. cream cheese
  • 1/2 c. chopped nuts

METHOD

  1. Melt butter over low flame.
  2. Add chocolate and stir just until melted.
  3. Stop heating add sweetener and vanilla and stir.
  4. Mix the mixture of chocolate with cream cheese and beat until smooth.
  5. Add the nuts and spread mixture in lightly greased pan.
  6. Refrigerate until solid.
  7. Cut into squares. Store in refrigerator

SUGARFREE FUDGE CANDY

INGREDIENTS

  • 13 oz. can skim evaporated milk
  • 3 tbsp. cocoa
  • 1/4 c. butter
  • 1 tbsp. granulated sugar, replacement
  • Dash salt
  • 1 tsp. vanilla extract
  • 2 1/2 c. unsweetened cereal crumbs
  • 1/4 c. nuts, very finely chopped

METHOD

  1. Add together milk and cocoa in saucepan
  2. Cook and stir vigorously over low heat until cocoa is dissolved
  3. Add butter, sugar replacement, salt and vanilla
  4. Bring to a boil and reduce heat and cook for 2 minutes
  5. Stop heating; add cereal crumbs and stir with wooden spoon
  6. Cool for about 12 minutes
  7. Divide in half; roll each half into a tube
  8. Toll each tube in finely chopped nuts
  9. Wrap around in waxed paper; chill overnight
  10. 10.  Cut into slices

SUGAR FREE FUDGE

INGREDIENTS

  • 1/2 sq. 1/2 oz. unsweetened chocolate
  • 1/4 c. unsweetened apple sauce
  • 2 tsp. diet sugar
  • 2 cracker squares, finely crushed/biscuit crumbs
  • 1 tbsp. non-fat dry milk
  • 1 tbsp. raisins, chopped

METHOD

  1. Bring chocolate, apple sauce and diet sugar to a boil in a saucepan.
  2. Boil for 2-3 minutes till it thickens up, meanwhile keep stirring.
  3. Stop heating. Combine cracker crumbs, dry milk and raisins.
  4. Add the chocolate mixture; mix well.
  5. Place on wax paper and shape into squares
  6. Chill and serve refrigerated.

RUSSIAN FUDGE

This fudge does not contain gluten.

INGREDIENTS

  • 1/2 cup milk
  • 1/2 tin of sweetened condensed milk
  • 1/2 cup butter
  • 1 teaspoon of golden syrup
  • 1/2 teaspoon salt
  • 3 cups sugar
  • almonds (optional)

METHOD

  1. Grease a large square plate for the base.
  2. Heat milk on a high flame in a medium pot. Add sugar till it dissolved.
  3. Add condensed milk, butter, golden syrup and salt.
  4. Boil for half an hour as you stir continuously.
  5. Once fudge is thick and has gone brown, it is ready.
  6. Pour the fudge onto a plate (greased) and wait until fudge has set (solid).
  7. Cut into squares.
